Kajiken: Japanese ba chor mee ?
When i visited Japan, i was introduced to tsukemen, a bed of cold al dente noodles, served alongside a thick, robust stock. Image concerns are put on hold and the dipping and slurping commences, not that any Japanese girls would be checking me out anyway but you know, just in case. Ever since then, i've been in love with dry ramen and all the different variations. Much like a good porno, i just had to check out Kajiken's when my friends recommended their excellent Mazesoba to me.
Tucked away among a stretch of Japanese eateries is a tiny ramen stall, with a big illustration of their signature ramen and directions to enjoy it plastered on the walls. Foolproof for idiots like me.
Mazesoba Nagoya Style $12.80 (additional flavoured egg at $1.50 each)
Do not be alarmed if it seems someone mistook you for a rabbit because you were served a massive bowl of greens. Trust me, the 1000kg worth of spring onions and seaweed is pivotal to the flavour of this beautiful bowl of ramen.
Combined with the runny yolk and their special minced pork mixture, it all comes together as a symphony of great taste.
The 20 seconds rule to eating Mazesoba (as proclaimed by Kajiken):
1) Mix ingredients thoroughly for 20 seconds.
2) Customize your own ramen by adding chilli oil and vinegar because even the most beautiful girl in the world could do with a bit of makeup
3) Holler “OIMESHI!” to the staff aggressively after finishing your noodles. You will receive a small portion of rice to mix with the remaining sauce.
(Editor's note: Oimeshi translates to "IM POOR PLS FEED ME MORE")
4) Feel like you got scammed because all of the steps take up more than 20 seconds.
Following the directions obediently because my parents taught me well. The fragrant minced pork and egg yolk makes the noodles so smooth you would think they used L'Oreal Professional Unlimted Smoothing Shampoo. (This post is definitely not sponsored btw) I skipped step 3 because i had emptied my bowl and all the glorious sauce before even realising. It's that good. Be warned that even though it's hard to resist ordering the upsized version because it's free and we all love free shit, it might get a little sickening towards the end without any other toppings.

There are several new outlets around the city, so you don't have to drag your lazy ass to Tanjong Pagar for an orgasmic ramen experience. We visited the Paya Lebar branch and it was as good as the main branch. The service was spectacular as well, with the staff very courteous and attentive to the customers' needs.
