The Big Cheese: Cheesey, Gooey Mac n Cheese

For Singaporeans, mac and cheese is a once in a blue moon indulgence due to the sheer sinful combo of butter, cheese and carbs. That being said, who doesn't love a good mac n cheese, especially when you can customise your own just the way you like it. 

Strategically located in between Bugis and Dhoby Ghaut, The Big Cheese is the complete opposite of a salad bar. They provide the lunch crowd with boxes of cheesey goodness that your doctor would definitely disapprove.

This tiny shop only houses 4 tables and chairs that sit around 10 pax in total, so do expect to takeaway your meals instead of dining in.

All of the ingredients they use are halal certified, with the only vegetable options being spinach and broccoli, which is perfect for meat lovers like me looking to eat myself into an early grave. 


The staff generously piles on your choice of toppings, not holding back on their ingredients and that's just the way we like it.


Choose from 9 types of cheese, 6 meats, mushrooms and 2 veggies. At only 50 cents for each additional topping, we felt like adding all of them except for those 2 gross, green things.

Big Cheese (Small $8, Regular $10, additional sunny side up + $1)
I went for one of the specialties that included chunks of pulled beef, truffle oil and topped with a sunny side up. This included the gruyere cheese, which was strong and salty, the perfect cheese to coat the macaronis in. The pulled beef was tender and flavourful, while the aroma of truffle perfumed throughout the box. Although the flavours were on point, i felt that a thicker and creamier cheese sauce would have been much more satisfying, but to each his own.

What impressed me was the box that kept the mac and cheese perfectly insulated. Halfway through my meal, the contents below were still piping hot as if it just came out of the oven. Good for saving some for later as the richness of everything felt pretty jelat (sickening) towards the end.

Make Your Own Mac (Small $6, Regular $7.50)
How your mac tastes largely depends on the type of cheese you chose. The combination of cheddar and parmesan was much milder than the gruyere, while adding the beef bacon gives it a smokey touch. What confused me the most was the pricing. Building your own mac has way more value than ordering their specialties. I could customise it just like the specialties and pay the same price while getting 2 extra toppings. Loophole alert.
